Breakfast Ideas

Whoa was yesterday crazy! Those of you reading who are teachers or work in the schools- are your students going bananas too or is it just me?

I wanted to linkup to SkinnyMeg for breakfast ideas. I'm part of her dietbet group where you can put in $25 and anyone who loses 4% of their bodyweight by October 1st gets to split the pot. I'm always up for making a few extra $$.

Here are some things I love for breakfast. Some are Reset recipes and some are just what I eat normally.

1. Oatmeal

I make a big batch Sunday and throw it in the fridge, then I can microwave portions quickly. I use steel cut oats. The convience packs can be loaded with sugar and chemicals so I avoid those.

Also I just discovered these and they are AWESOME!! It's frozen steel cut oatmeal and you just pop it in the microwave for 3 minutes and top it. It's all natural-no preservatives.

Here are some of my favorite toppings:

1. Dried cherries & unsweetended dark chocolate chips
2. Apples, walnuts, and pure maple syrup (the real stuff, not the traditional bottled syrup).
3. Blueberries and agave syrup
4. Bananas, pecans, and PB2
5. 1/2 scoop of chocolate shakeology (or protien powder), fresh strawberries, and a little bit of stevia

2. Egg Muffins

Take either egg whites or whole eggs, mix with toppings, bake in muffin tin, put in the fridge. I'll eat these with a side of fresh fruit for breakfast.

Here are some mix-ins I love:

1. Chopped turkey bacon, green pepper, onion- top with salsa
2. Chopped turkey sausage, mushroom, spinach
3. Mushrooms, onions, peppers, spinach, and diced tomatoes

You can really take any omelet toppings and just mix them in.

3. Waffles 

I am obsessed with these. They are amazing! I'll top them with a little pure maple syrup or just eat them plain and then add a side of fruit.

4. Greek Yogurt, fresh figs, pecans, raw honey



I love this so much! It's very filling too.

Total Burnout


  I apologize for my lack of updates. I'm truly just burnt out. I made one VERY big mistake on the Reset- weighing myself everyday. On day 4 I gained a pound and after that my motivation truly slipped and I have just felt very burnt out. 
Now one thing I am very proud of is I have stuck with it and haven't cheated at all. However that pep in my step (or swag as my 6th graders call it) is gone. I'm making it a goal for myself to not weigh in until the last day.
So far there are some things I like and some things I really don't like about the Reset. I am beyond sick of vegetables, which is weird for me since I usually love them. I am also very sick of cooking every meal. On the other hand I love how accountable I am for my water drinking, I have been feeling a lot better, and I also love that I feel like I'm doing something productive.
Right now I'm missing chocolate and working out. I'm also seriously craving a homemade burger.

I'm so thankful that Jeff is doing this with me, because I feel like I would have caved already and cheated.

On the brightside this is Day 7 so we are about 1/3 of the way there. 

So far some of my favorite foods from these past few days have been zucchini-cashew soup, roasted root medley, and asian stir fry. I could honestly say eating baked tempeh for breakfast will not be happening ever again (unless I do the Reset again).

Day 3

I am loving this 3 day weekend! We went to Raleigh today just to go to Whole Foods. It was really tough not to get whatever I wanted there, but we stuck to Reset food. 

Jeff hasn't weighed in, but I have (I am a scale addict) and I've already lost 5.2 pounds!! I'm beyond thrilled about this and can't wait to see what the end result is. I've entered a few dietbets online so if I keep going at this rate I'll be able to get some money as an added bonus :)

Day 3 was pretty easy! Same breakfast as day 1, lunch was lentil lime salad and microgreen salad, and homemade sushi for dinner along with miso soup and japanese cucumber salad.
